for 4 people:

  • 1/2 kg. leg, nose and pork belly.
  • 4 blanquets.
  • 1/4kg of rice.
  • 1/4 of white beans and lentils soaked the day before.
  • 1/4 l. olive oil.
  • 1/2 kg. of pencas (thistle) and chard.
  • Salt
  • pure saffron.

Olleta alicantina


  1. Put the meat and the beans in a pot.
  2. When it starts to boil, add the vegetables and the oil.
  3. Once cooked, add the salt, saffron and rice, leaving it to cook for twenty minutes.
